Pineapple Lemon Muffin

This is one of the muffin recipes we used for the 2010 BarCamp.

Pineapple Lemon Muffins

Ingredients:
250g canned pineapples
160g caster sugar
230g butter (room temperature)
230g self-raising flour (sifted)
3 eggs (Grade A)
50g raisins
1/2 tsp lemon essence
5 pieces Oreo biscuits for decoration

How to:
1. Cut the pineapple into small cubes.

2. Soak the raisins in boiled water for 20 minutes and drain it.

3. Preheat your oven to 180 degrees (C).

4. In a mixing bowl, cream the butter and caster sugar at low speed to soften the butter. Then increase the speed of the beater to medium and beat until the mixture is smooth and light in texture (takes approximately 10 minutes).

5. Beat in the eggs and lemon essence.

6. Stir in the self-raising flour until mixture is just combined.

7. Add in the raisins and pineapple.

8. Spoon the batter into muffin cups until about 80% full and bake for 25 minutes.

9. Cut the Oreo cookies into triangles and stick them on top of the muffins.

These muffins look as good as they are delicious! But a wedge of Oreo cookies on top of the muffins will make your muffins more delectable!
